Hello, how’s New Year going for you all!?… How’s the healthy eating promises going for you? Don’t worry… you’re not alone! According to a study I came across last last year, just 8% of us stuck to our new year healthy lifestyle goals!
In reality there is no hard refresh button for us to press that will suddenly change our habits and tackle all the other external factors that influence the decisions we make. We get overwhelmed.
Instead of trying to conquer everything at once, try baby steps. A few small and simple decisions when it comes to planning your meals to include more freshly prepared home cooked food can make a huge difference. Below are two simple dinner ideas I think would suit most households throughout the week.

Roast a Chicken
Yes it might sound easier said than done but believe me the small effort required to roast a chicken will pay dividends! How about on a Sunday, roasting a chicken for an hour and a half, head out for a family walk and come home to the smell of a crispy roast chicken ready to take out of the oven! Not only will you have a super wholesome Sunday meal but you’ll have leftover chicken no doubt, that can be used Monday and Tuesday for school lunches or Monday night’s Chicken Curry (with a diced onion and frozen mixed veg of carrots, peas & broccoli!) Serve with microwavable Basmati Rice – a great inexpensive cupboard staple!
Boil a Ham
How many of you pick up packets of ham for the school lunches? Well next time, pick up a small ham, loin of bacon or bacon offcuts instead. Follow the easy peasy boiling instructions and have it cooking in the background while watching your favourite Netflix series! Place the ham on a roasting dish with honey, brown sugar and some cloves and roast. Slice it up for the next days dinner with some potatoes and stir-fried cabbage. Or simply keep for the school lunches throughout the week. Ham lasts from 5-6 days, and trust me you will not buy packet ham again!
